In two-hour classes, each beginning at 6:30 p.m., pupils nosh on imported and domestic cheeses and learn how to enhance each bite’s flavors with an appropriate wine pairing. Over samples of American, Australian, and European varietals, instructors convey basic wine information, explain the wine and cheese aging process, how a vineyard’s location affects wine flavors and regional accents, and outline proper bottling and storage techniques. Before or after classes, attendees can purchase additional wine samples or quell enduring hunger with dinner from the eatery’s full menu.
